I just googled "upcycling" and still have no idea what it means. Is it just a fancy word for "making stuff"?

Its when you use materials otherwise unwanted to make something new and desirable.

How is it different to recycling?

(Sorry, I don't mean to be rude, I just don't quite understand it! Perhaps I should google some more. :)

Well recycling is a process that breaks down items, and generally a term reserved for anything but apparel. Upcycling simply uses unwanted material, it does not break it down, and usually is referenced for clothing.
